Produced from Barbera grapes that are only harvested when they have achieved a ripeness of 200 grams of sugar per litre of must. The wine is fermented in medium-size vats and is decanted two to three times. It then matures for a year in small oak casks before resting for another year in the bottle. With its deepish crimson colour, it develops a characteristic cherry fragrance. A wine of stature, full and satisfying, with an acidity that makes it ideal for ageing. Serve at room temperature. Enjoy with red meats and cheese.
